Sodium Tripolyphosphate (CAS 7758-29-4) is a sodium polyphosphate salt supplied as a white powder, granule or crystal, hygroscopic and highly soluble in water, used in food as a preservative and emulsifier, in meat processing for moisture retention, in detergents as a builder, and in water softening. Density 2.52 g/cm³, decomposes above 100°C; highly soluble in water forming alkaline solutions. Hygroscopic; produced by heating sodium phosphate mixtures.
