What is Sorbic Acid?
Sorbic acid or 2,4-hexadienoic acid is a natural organic compound used as a food preservative. It has the chemical formula CH3(CH)4CO2H. It is a colorless solid that is slightly soluble in water, better soluble in oil, and sublimes easily. It was first isolated from the unripe fruit of Sorbus aucuparia (row ash) and was named after this tree.
The most common use of sorbic acid is in the food industry as an antimicrobial, versatile and safe preservative. Salts such as potassium sorbst and calcium sorbate are also used here. In general, salts are preferred to the acid form as they are more soluble in water, but the active form is acid. The optimal pH value for antimicrobial activity is below 6.5. Sorbates are generally used at concentrations of % 0.025 to % 0.10. However, adding sorbate salts to food slightly raises the pH of the food, so the pH may need to be adjusted to ensure safety.
Sorbic acid is found as a preservative in many foods such as cheese, meat products, fruit juices, dried fruits, instant soups, pickled cucumbers and bread & bread products. It prolongs shelf life by preventing microbial formations in these foods. It inhibits the growth of mold and yeast to a particularly high extent.

Other detoxification reactions include reduction to 4-hexenol and 4-hexenoic acid.

It was traditionally produced by the condensation of sorbic acid, malonic acid and crotonaldehyde.
