What is Sodium Acetate?

C2H3NaO2 Sodium Acetate, which has the chemical formula, is also abbreviated as NaOAc. It is the sodium salt of acetic acid. This colorless soluble salt has a wide range of uses.

The crystal structure of anhydrous sodium acetate has been described as alternating layers of sodium-carboxylate and methyl groups. The structure of sodium acetate trihydrate consists of defective octahedral coordination in sodium. Adjacent octahedra share edges to form one-dimensional chains. Two-dimensional hydrogen bonding between acetate ions and water of hydration connects the chains into a three-dimensional network.

How is Sodium Acetate produced?

For laboratory use, sodium acetate is often purchased rather than synthesized.

Sometimes in laboratory experiments, sodium carbonate of %5-8, commonly known as vinegar, is produced by reacting acetic acid in a solution of sodium bicarbonate or sodium hydroxide.

Any of these reactions produces sodium acetate and water. When using a compound containing sodium and carbonate ions as reactive, the carbonate anion from sodium bicarbonate or carbonate reacts with hydrogen from the carboxyl group (-COOH) in acetic acid to form carbonic acid. Carbonic acid readily decomposes into gaseous carbon dioxide and water under normal conditions. This is the reaction that occurs when the household products baking soda (bicarbonate) and vinegar come together.

  • Sodium acetate is used to reduce water damage to concrete by acting as a concrete sealant, while also being environmentally friendly and less expensive than the epoxy alternative commonly used to seal concrete against water permeability.
  • The E-number is E262. It can be added to food as a seasoning. It is often used to flavor potato chips with salt and vinegar. Anhydrous sodium acetate is widely used to extend the shelf life of foods and as a pH control agent. It is safe to eat in low concentration.
  • A solution of sodium acetate (the basic salt of acetic acid) and acetic acid can act as a buffer to maintain a constant pH level. This is particularly useful in biochemical applications where the reactions are pH dependent in a slightly acidic range (pH 4–6).
  • Sodium acetate is also used in heating pads, hand warmers, and hot ice. Sodium acetate trihydrate crystals melt at 58 °C and dissolve in crystallization waters.
