What is Oleic Acid?

Oleic acid is a naturally occurring fatty acid in various animal and vegetable fats and oils. It is an odorless, colorless oil, but commercial samples may be yellowish. In chemical terms, oleic acid is classified as a monounsaturated omega-9 fatty acid, abbreviated with a cis-9 lipid number of 18:1. It has the formula CH3 (CH2) 7CH = CH (CH2) 7COOH. Its name derives from the Latin word oleum, meaning oil. It is the most common fatty acid in nature. Salts and esters of oleic acid are called oleates.

Fatty acids (or their salts) do not usually occur as they do in biological systems. Instead, it occurs as esters of fatty acids such as oleic acid, usually triglycerides, the 'fatty' substances in many natural oils. Oleic acid is the most common monounsaturated fatty acid in nature. Oleic acid is found in triglycerides, phospholipids, cholesterol esters, and wax esters.

How is Oleic Acid produced?

The biosynthesis of oleic acid includes the action of the enzyme stearoyl-CoA 9-desaturase acting on stearoyl-CoA. Indeed, stearic acid is dehydrogenated to give the monounsaturated derivative, oleic acid.

Oleic acid undergoes reactions of carboxylic acids and alkenes. It dissolves in aqueous base to give soaps called oleates. Iodine is added to the double bond. Hydrogenation of the double bond gives the saturated derivative stearic acid. Oxidation at the double bond occurs slowly in air and is known as mold growth in foodstuffs and drying of coatings. Reduction of the carboxylic acid group gives oleyl alcohol. Ozonolysis of oleic acid is an important pathway to azelaic acid. The common product is nonanoic acid:
